Gujaratis are very fond of eating new varieties. And, it is primarily a vegetarian state due to the influence of Jain vegetarianism.

Gujarati cuisine varies widely in taste and flavour, depending on a family’s taste.

I’m also a fan of Gujarati cuisine. And, had tried a lot of Gujarati recipes.

This time I have brought for you guys a very famous Gujarati dinner recipe i.e sev tomato sabji.

Sev tomato sabji is a famous vegetarian dish from gujarati cuisine.
Gujaratis called this sabji as "Sev tamatar nu saag"
Where ‘saag’ means sabji in Gujarati.
This is a very easy and quick recipe and very less ingredients are required to make this recipe.
I learnt how to prepare this sabzi from one of my Gujarati neighbours.
Once they made me taste this recipe and after that I became a big fan of this recipe.
You can serve this recipe with roti,naan or even jeera rice or plain rice.
I also like to have this sabji with Khakhras.

Ingredients
  

  • 1 Onion Chopped
  • 2 Ripped Tomatoes Chopped
  • 4 tsp Oil
  • ½ tsp Mustard Seeds
  • ½ tsp Cumin Seeds / Jeera
  • ¼ tsp Methi Seeds / Fenugreek Seeds
  • pinch Hing / Asafoetida
  • 1 tsp Kashmiri Red Chilli Powder
  • ¼ tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • Salt to taste
  • 1 cup water
  • Few Coriander Leaves Chopped
  • 1 cup Crispy sev

Instructions
 

  • Heat 4tbsp oil in a kadai.
  • Add mustard seeds,jeera,methi and hing, let the mustard seeds splutter first.
  • Add 1 finely chopped onion to the oil and saute it till it turns golden.
  • Now add 2 finely chopped red tomatoes.
  • Further add species like chilli powder,turmeric powder,coriander powder and salt as per taste.
  • Mix well and let the species cook on a medium flame for 2-3 minutes.
  • Now, add a cup of water and mix it well, add more water if required to adjust the consistency.
  • Let the sabzi cook for 10 minutes till it cooks completely.
  • Switch off the flame. Sabji is cooked.
  • Add some finely chopped coriander leaves and give it a mix.
  • Transfer the sev tomato sabzi into a serving bowl and garnish it with crispy sev.
  • Immediately serve the sabzi else the sev will get soggy.

Now, many of you would be wondering whether this sev tomato sabji is healthy or not?

So, the simple answer is ‘YES’. Just take care of one thing that you use baked sev instead of the fried one.

1. Tomatoes:

Tomatoes are super rich in vitamin C and science says that it is also good for the heart. In Fact for pregnant women it is very much beneficial as it helps your body produce new blood cells.

2. Turmeric Powder:

For food digestion turmeric is very helpful. It is also rich in iron. Infact one should regularly take this in their food. Turmeric is also treated as good brain food.

3. Ginger:

Ginger is very much beneficial for curing sore throat,cold and cough. It is also effective in decreasing cholesterol levels.

4. Hing(Asafoetida):

It is known that Asafoetida has antibacterial properties and which helps in keeping Asthma at Bay. It also helps in preventing dryness of hair and it smoothen hairs also.
